How to make Millionaire’s Shortbread! Rich caramel bars made with three layers of crispy and buttery shortbread, thick caramel, and chocolate ganache sprinkled with sea salt flakes. Made with basic pantry ingredients they’re super easy to make and impossible to resist.
Chocolate, caramel, and shortbread, it’s a pretty incredible combination that totally lives up to its name, I mean, I don’t know anyone who can resist a square of Millionaire’s shortbread. I love to use semi-sweet chocolate for a slightly bitter and richer flavor and top them with sea salt flakes which makes them extra delicious, hello salted caramel!

Healthy & Light Millionaire’s Shortbread Bars (Twix Bars) 🍫🍯

🛒 Ingredients
1. The Shortbread Crust:
1½ cups All-purpose flour (180g) – 17 Points
⅓ cup Light butter, melted – 8 Points
¼ cup Granulated sugar sweetener (like Monk Fruit or Swerve) – 0 Points
1 tsp Vanilla extract + ¼ tsp Salt – 0 Points
1-2 tbsp Water (only if needed to bind the dough) – 0 Points
2. The Guilt-Free Caramel Layer:
½ cup Almond butter or Peanut butter powder (like PB2 reconstituted with water) – 6 Points
½ cup Sugar-free maple syrup or fiber syrup (like ChocZero or Log Cabin Sugar-Free) – 2 Points
¼ cup Brown sugar sweetener (like Swerve Brown) – 0 Points
1 tsp Vanilla extract + A pinch of salt – 0 Points
(Optional: 2 tbsp of melted light butter to make it extra rich – adds 4 Points)
3. The Chocolate Topping:
1 cup Sugar-free chocolate chips (like Lily’s Semisweet or Dark Chocolate Style) – 37 Points
1 tsp Coconut oil (helps the chocolate melt smoothly) – 4 Points
Flaky sea salt for sprinkling on top – 0 Points

Step 1: Bake the Crust
1 Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
2 In a bowl, mix the flour, melted light butter, sweetener, vanilla, and salt until it forms a crumbly dough. If it’s too dry, add a splash of water.
3 Press the dough firmly into the bottom of your prepared pan in an even layer.
4 Bake for 12–15 minutes or until the edges are lightly golden. Let it cool completely.
Step 2: The Caramel Layer
1 In a small saucepan over low heat, combine the almond/powdered butter, sugar-free maple syrup, and brown sweetener.
2 Stir constantly for 2-3 minutes until completely smooth and slightly thickened.
3 Pour the caramel layer evenly over the cooled crust and pop it in the freezer for 15 minutes to set.
Step 3: The Chocolate Ganache
1 In a microwave-safe bowl, melt the sugar-free chocolate chips and coconut oil in 30-second intervals, stirring in between until smooth.
2 Pour the melted chocolate over the set caramel layer and spread it evenly.
3 Sprinkle a little flaky sea salt on top for that perfect sweet-and-salty balance.
4 Refrigerate for at least 45 minutes to 1 hour until the chocolate is completely firm. Cut into 24 bars and enjoy!
