Low-Point Juicy Paprika Chicken Skewers with Orange Marinade

Ingredients

  • 1 lb (450 g) boneless, skinless chicken breast, cut into 1-inch cubes
  • 1 large orange, zest and juice
  • 1 tbsp olive oil
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp ground cumin (optional)
  • 1 tbsp chopped fresh parsley (for garnish)

Instructions

  1. In a large bowl, whisk together the orange zest, orange juice, olive oil, smoked paprika, garlic powder, onion powder, oregano, salt, pepper, and cumin.
  2. Add the chicken cubes and toss until well coated. Cover and marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
  3. Thread the marinated chicken onto soaked wooden skewers or metal skewers.
  4. Preheat a grill or grill pan to medium-high heat.
  5. Grill the skewers for 10–12 minutes, turning every few minutes, until the chicken is golden and reaches an internal temperature of 165°F (74°C).
  6. Sprinkle with fresh parsley before serving.
