Chicken is zero points but the chick’n scallopini is 2 points per fillet, so I would keep the fillets whole in the slow cooker and cut them up after you put one in your bowl. That way you know you’re actually getting 2 points and just one patty, not only ½ of a chick’n patty and not 2 whole chick’n patties.

- Chick’n Scallopini 1 fillet for each serving – we did 4
- 1 cup organic creamy vegan protein broth alternatively, you can use vegetable broth for 1 point per cup
- 2 cups vegetable broth
- 2 cups fresh spinach
- 3 cloves garlic minced
- one can artichokes- DRAINED
- Seasonings: I used onion powder pepper, and salt
- Optional: mushrooms
Instructions
- Combine ingredients in slow cooker. Cook on low for 2 hours. This soup is DELICIOUS when served alone, but is also awesome with bread to dip in it.
Recipe Notes
I could not find the point value for the organic vegan protein broth. It’s creamy, so I know it has some points, but I estimated it at 4 for the cup based on other items I found in the WW app. If you find the exact point amount, please let me know!
