Ingredients
- 2 lb 900 g pork belly, skin removed, cut into 1-inch cubes
- 1 tbsp olive oil
- 1 tsp kosher salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- ½ tsp cayenne pepper optional
- 1 tbsp brown sugar
Optional Dipping Sauce
- ¼ cup honey
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sriracha or hot sauce
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or foil and place a wire rack on top if available.
- Season the pork belly. Pat the cubes dry with paper towels. In a large bowl, toss the pork belly with olive oil, salt, pepper, garlic powder, onion powder, smoked paprika, cayenne pepper, and brown sugar until evenly coated.
- Arrange for baking. Spread the pork belly pieces in a single layer on the prepared rack or baking sheet, leaving space between each piece.
- Bake until crispy. Roast for 45–55 minutes, turning the pieces halfway through cooking. The pork should be deeply golden, crispy on the outside, and tender inside.
- Optional glaze. While the pork cooks, whisk together honey, soy sauce, rice vinegar, and sriracha in a small saucepan. Simmer for 2–3 minutes until slightly thickened.
- Finish and serve. Remove the pork belly bites from the oven and let rest for 5 minutes. Toss with the glaze or serve it on the side for dipping.
