WHAT EXACTLY IS A CRINKLE CAKE?
If you have been scrolling through social media or watching food videos lately, you have probably seen various iterations of the crinkle cake (sometimes referred to as Muakacha). At its core, a crinkle cake is a delightful dessert or savory bake made by taking thin, delicate sheets of phyllo dough, folding them like an accordion, and baking them until they achieve a gorgeous, golden crispness.

Ingredients
- 8 sheets phyllo dough, thawed
- Cooking spray (butter-flavored, if desired)
- 2 large eggs
- 1 cup unsweetened almond milk
- ¼ cup zero-calorie granulated sweetener (Monk Fruit or Splenda)
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- ½ teaspoon baking powder
- Powdered zero-calorie sweetener, for dusting (optional)
Instructions
- Preheat oven to 350°F (175°C).
- Lightly coat an 8-inch square baking dish with cooking spray.
- Scrunch each sheet of phyllo dough into loose accordion folds and place them side by side in the baking dish until full.
- Lightly spray the top of the phyllo with cooking spray.
- Bake for 15–18 minutes, until lightly golden.
- Meanwhile, whisk together the eggs, almond milk, sweetener, vanilla, cinnamon, and baking powder.
- Carefully pour the custard evenly over the baked phyllo.
- Return to the oven and bake for 25–30 minutes, until the custard is set and the top is deep golden brown.
- Cool for 10–15 minutes, then dust with powdered zero-calorie sweetener if desired.
