  • 1 lb boneless, skinless chicken breasts, cut into strips
  • 1 onion, finely diced
  • 2 cups mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup sour cream
  • 2 tbsp all-purpose flour
  • 2 tbsp olive oil
  • 1 tsp paprika
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the chicken strips and season with salt, pepper, and paprika. Cook until golden brown, then remove from the skillet and set aside.
  2. In the same skillet, add the diced onion and cook until translucent. Add the sliced mushrooms and cook until softened.
  3. Stir in the minced garlic and cook for 1 more minute.
  4. Sprinkle flour over the mushroom mixture and stir well to combine. Gradually pour in the chicken broth, stirring continuously to avoid lumps.
  5. Simmer the sauce for about 5-7 minutes until it thickens. Lower the heat and stir in the sour cream until smooth.
  6. Return the cooked chicken to the skillet and toss to coat in the sauce. Cook for an additional 3-4 minutes, or until the chicken is fully cooked.
  7. Garnish with fresh parsley and serve hot over pasta, rice, or mashed potatoes.
