All it takes is adding a few more ingredients to your mashed potatoes and right away you bring this side to a whole new level.

Ingredients
- 1¼ lbs potatoes (600g), peeled and chopped
- 1 tsp salt
- ½ cup skim milk (120ml)
- 1 tbsp light butter
- 4 oz lean canned corned beef, chopped
- ¼ cup dill pickles or gherkins, chopped
- Optional: sliced jalapeños
- Fresh parsley for garnish
Instructions
- Boil the potatoes in salted water until fork tender, about 15–20 minutes.
- Drain well and mash with the skim milk and light butter until creamy.
- Stir in the chopped corned beef, pickles, and jalapeños if using.
- Heat for 2–3 minutes until warmed through.
- Garnish with fresh parsley and serve warm.
