Ingredients
- 6 cups Kodiak Buttermilk Flapjack Mix
- Flour for workspace
- 2 Tbsp Baking Powder
- 1 Tsp Baking soda
- 1/2 cup applesauce
- 1/4 cup light butter
- 3/4 cup nonfat greek yogurt
- 3 eggs 1 is for eggwash
- 1 1/2 cup + 1 tsp Light Buttermilk
Instructions
- In a large bowl, whisk togehter 2 cups of kodiak mix, baking powder, and baking soda. Add the applesauce, butter and yogurt.
- Stir in 2 eggs until well combined. Add the buttermilk. Add 4 cups of additional Kodiak mix 1 cup at a time until dough is formed- will be sticky. Cover and put in fridge for at least 30 minutes or overnight.
- Preheat oven to 400 degrees. Line a baking sheet with parchment paper.
- Put the dough onto a flat surface that’s covered in flour. Spread dough out into a 12″ by 24″ rectangle and 1/2″ thick.
- Use a 2 3/4″ biscuit cutter and cut 48 biscuits. Transfer to the baking sheet and allow them all to touch.
- Whisk last egg and 1 tsp of buttermilk. Brush over top of biscuits.
- Bake 15-20 minutes or until golden brown.
