Buttermilk Biscuits Made Easy

Weight Watchers friends, these are ONE point💙each! I made 56. You can make them thicker and get less. if you make between 28 and 46 they’re 2 points each.

Ingredients

  • 6 cups Kodiak Buttermilk Flapjack Mix
  • Flour for workspace
  • 2 Tbsp Baking Powder
  • 1 Tsp Baking soda
  • 1/2 cup applesauce
  • 1/4 cup light butter
  • 3/4 cup nonfat greek yogurt
  • 3 eggs 1 is for eggwash
  • 1 1/2 cup + 1 tsp Light Buttermilk

Instructions

  1. In a large bowl, whisk togehter 2 cups of kodiak mix, baking powder, and baking soda. Add the applesauce, butter and yogurt.
  2. Stir in 2 eggs until well combined. Add the buttermilk. Add 4 cups of additional Kodiak mix 1 cup at a time until dough is formed- will be sticky. Cover and put in fridge for at least 30 minutes or overnight.
  3. Preheat oven to 400 degrees. Line a baking sheet with parchment paper.
  4. Put the dough onto a flat surface that’s covered in flour. Spread dough out into a 12″ by 24″ rectangle and 1/2″ thick.
  5. Use a 2 3/4″ biscuit cutter and cut 48 biscuits. Transfer to the baking sheet and allow them all to touch.
  6. Whisk last egg and 1 tsp of buttermilk. Brush over top of biscuits.
  7. Bake 15-20 minutes or until golden brown.
  8. Serves 48 biscuits
