Ingredients

For the crust:

  • 1½ cups white whole wheat flour
  • ½ cup oat flour
  • ¼ cup granulated sweetener (or 2 tbsp sugar)
  • 1 tsp baking powder
  • ¼ tsp salt
  • ¼ cup light butter, melted
  • ½ cup unsweetened applesauce
  • 1 tsp vanilla extract

For the filling:

  • 2 large eggs
  • ¾ cup nonfat plain Greek yogurt
  • ¼ cup light sour cream
  • ⅓ cup granulated sweetener (or sugar substitute)
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract
  • 4 cups fresh or frozen blackberries (thawed and drained if frozen)
  • Zest of 1 lemon (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, combine the white whole wheat flour, oat flour, sweetener, baking powder, and salt.
  3. Stir in the melted light butter, applesauce, and vanilla until a soft dough forms.
  4. Press about ⅔ of the dough into the bottom of the prepared pan.
  5. In another bowl, whisk together the eggs, Greek yogurt, light sour cream, sweetener, cornstarch, and vanilla until smooth.
  6. Fold in the blackberries gently.
  7. Pour the filling over the crust.
  8. Crumble the remaining dough evenly over the top.
  9. Bake for 40–45 minutes, or until the center is set and the top is lightly golden.
  10. Cool completely, then refrigerate for at least 2 hours before slicing into 16 bars.
