Cheesecake topped with brownie whipped cream and strawberries

This was absolutely delicious!! 1 weight watchers point per serving! This cheesecake with flavored add-ons makes 8 servings

Ingredients

  • 3 large eggs – 0 points
  • 3 cups Fage’ nonfat greek yogurt – 0 points
  • 1 ounce box sugar free / fat free cheesecake pudding mix
  • 3 Tbsp sugar substitute I used Monkfruit
  • 1 Tbsp vanilla extract Pam spray
  • Toppings: % Fiber One Chocolate Fudge brownie – 2 points
  • Strawberries – 3 sprinkled with monkfruit sweetener – 0 points
  • I took about 15 strawberries, chopped and tossed them with 1 tsp of monkfruit and used a few spoonfuls for this serving
  • Lite Cool whip – almost 3 tbsp -1 point

Instructions

  1. Preheat 350* In a large bowl, thoroughly whisk the following ingredients: eggs, sugar substitute, vanilla. Add yogurt and pudding mix, whisk thoroughly. Spray pie dish with Pam. Pour mixture and distribute evenly
  2. Pour mixture and distribute evenly Bake 30 minutes Allow to cool for approx 30 minutes Cover with plastic wrap and refrigerate for at least 12 hours Cut and top with desired toppings.
  3. The Fiber One brownie and strawberries were an amazing combo. Some complain that they have issues with the fiber one bars, so, buyer beware. Mix the toppings up to your liking. In my opinion, it at least needs cool whip/whipped cream. Smuckers sugar free caramel would be great. I’m not a huge fan of hershey sugar free chocolate syrup, but if you like it – go for it!
