3 Point for two of these patties😁one of those recipes that feel almost too easy — everything mixes in one bowl, and the sweet potato makes them soft and juicy without adding any extra points. They taste amazing straight from the pan, especially with a tiny drizzle of light sweet chili sauce.

Ingredients (Makes 15 patties)

  • 500g chicken breast mince
  • 200g cooked sweet potato, mashed
  • 1 medium red onion, finely chopped
  • 2 cloves garlic, grated
  • 2 tbsp fresh parsley, chopped (+ extra for topping)
  • 2 tbsp fresh basil, chopped
  • 1 egg
  • 100g panko breadcrumbs
  • 20g grated parmesan
  • 2 tsp olive oil
  • 2 tbsp light sweet chili sauce (for serving)
  • Salt & pepper

Instructions

  1. In a large bowl, mix the chicken mince, mashed sweet potato, onion, garlic, parsley, basil, egg, breadcrumbs, parmesan, salt, and pepper.
  2. Scoop and shape the mixture into 15 small patties.
  3. Heat 1 tsp olive oil in a non-stick pan over medium heat.
  4. Cook half the patties about 5 minutes per side, until golden and cooked through.
  5. Repeat with the remaining 1 tsp oil and remaining patties.
  6. Serve with a little sweet chili sauce and sprinkle with extra parsley.
